Good news for all of us this Thanksgiving – cooking well doesn’t mean cooking fancy.
To back that up, we thought we’d share our favourite Thanksgiving recipe. It’s oh-so-simple but melt in your mouth delicious!
DJ BBQ Jamie Oliver Turkey Brine
This recipe is enough brine for a medium sized turkey. Bigger turkey = more brine.
Fill large pot with water and heat (approximately 13 cups/2L of water).
1/2 cup salt
8tbsp brown sugar
2 lemons – peel rind, juice, and guts
1 large navel orange – peel rind, juice, and guts
8 cloves of garlic minimum
3 red chili peppers, sliced open
1-2 cinnamon sticks
Fresh rosemary (break apart)
Fresh sage (break apart)
Salt & pepper
Cool brine with 4 cups of ice. Do not put turkey in warm brine, so let it cool completely.
Once cool, transfer to large pot and add turkey feet first. The turkey should be covered in brine.
Marinate for at least 24 hours, which will really add that layer of flavour.
Thanksgiving morning separate the skin from breast and slather with butter.
Feel free to add some bacon to the top or the turkey. Bacon + Turkey = Delicious!
Heat oven to 450, add turkey, then immediately turn down to 350. Find a turkey calculator online and cook as per instructions. We did our 18lb turkey for about 4.5 hours, unstuffed. If you’re stuffing the turkey, cook for about 6 hours.
